Cave Only Semi Anarchy Survival
CaveMC is a semi anarchy survival server that feels like vanilla but tougher. The whole overworld is underground so there is no surface at all. It is all caves with biomes resources and structures and it is made with custom world generation.
Season 2 is live with a fresh start. Survival is brutal and you have to be smart to keep going.
There is also a big expansion called the Wasteland Dimension. It adds new gear to fight for plus huge mega structures with secrets. It also has its own currency so players can trade and build a new economy. AfterHours SMP is a whitelisted Java Edition server for players who are 18+ and want a relaxed place to play.
It is mostly vanilla survival with a small set of Hermitcraft style datapacks. They add some quality of life stuff and extra fun but it still feels like classic Minecraft.
The vibe is calm and social and people focus on creativity and working together. The world is fresh and the server launched its first world on January 31st. The Pen is a classic prison server that feels like the older days where you actually have to grind. You start with basic tools and leather armor and you work your way up through ranks from A to H then Parolee and Citizen.
The big thing here is risk. You smelt your ores and you have to walk through PvP zones to sell them at the Commissary so it is not just instant money. Swords and potions are illegal too and the Guards will fight you if they catch you with them. If you act up you can even get sent to solitary.
There are lots of ways to make money besides mining like custom fishing and growing special illegal plants in your cell for profit. You can rent a prison cell or a plot to store items build and even run your own shop. There are quests for extra cash and special items plus an auction house bounties and parkour around the prison. I found a new survival PvP server called RemakeSMP and it feels like one of those places where you join and instantly have to watch your back.
People run in teams and there are assassin groups too so it gets intense fast. The main vibe is fighting and trying to keep your stuff safe before someone takes it.

Nomonom SMP is a Java survival server on 1.21.11 and it is still early so the worlds are not heavily used right now. It feels like the server is meant to last and not just a quick rush to the end.
It has an economy and plots for building and dungeons to explore. PvP is a big thing here with KOTH and duels and they want more PvP players to join. The arenas and duels are getting improved over time.
