I found a server that feels like a chill place to play survival with other people who are actually active. The group sounds friendly and they want more nice players to join in and hang out.
It is cross play so Java and Bedrock players can both connect. The server stays mostly vanilla but it has a few quality of life plugins like Proximity Chat and VeinMiner plus McMMO.
They run the latest Java version and they also let older clients join using ViaVersion. The staff is heavy on moderation so griefing is said to be almost not a thing. I found Tubalith and it is a pvp first network for people who want real fights and competition not chill survival.
The SMP is survival with real stakes. Pvp is on and people are supposed to fight. Base raiding and looting are allowed so you have to be careful. Players make alliances then start wars and sometimes betray each other.
They also have custom legendary weapons and armor with abilities and cooldowns so fights stay skill based. There are KOTH events happening multiple times per day and new legendary drops weekly.
If you want straight up pvp there is a Duels mode with fast arena fights competitive kits and a ranked ELO system.

The Eternal Region is a community based survival server that is whitelisted so it stays calmer than most public places. It is meant for mature players who want to build together and keep a world going for a long time.
It keeps a vanilla first style but it also has some small quality of life changes. Phantoms are off and endermen cannot mess up the world and you get double shulker shells.
The world border starts small and grows every day and it is currently 5000 by 5000. It also uses Simple Voice Chat so people can talk while they play.

God of Anime is a JJK inspired server where your choices actually change things. It is built around quests that branch so your decisions can affect your story your allies and your rewards.
It has multiple progression paths so it is not just one straight line. You can earn free rerolls from a short in game quest so you can grind for what you want.
The world is connected with cross region support using multiverse plugins. There are PvP tournaments and Culling Games style events with real prizes on the line.
The server also has custom cursed techniques made in house and they are designed for different playstyles and creative builds from multiple anime verses. It is in early alpha and the quest systems are still expanding.
