LumaMC is a survival towny server that tries to go a bit beyond a normal world. From what I saw it feels like a chill place where you can join a town or start your own and slowly build up with other players.
The main land uses Towny for claiming so towns and nations actually matter. There is a jobs system and a player based economy so you make money by working and trading with other players instead of just selling to a random shop. There is also mcMMO so your skills level up while you play and you feel stronger over time.
The server uses custom items with special abilities and they run a Hoarder plugin where you sell big stacks of items for extra cash and the top players in the event get rewards. There are ranks you can climb for more titles and abilities so there is always a goal to work toward.
LumaMC also has a dynamic seasons world where the season time and weather match real life in the northern hemisphere. There are fishing competitions with custom fish and an Artmap plugin so people who like art can make map drawings and show them off.

This is a small modded Java server that feels really relaxed and chill. It is run by a couple friends and they already have a little group of like seven or eight players who hop on regularly.

This server is a wild social experiment in Minecraft. The world border is 7k by 7k so space and resources are actually limited. People have to think hard about what they build and where they build it.
It uses the Create mod for industry stuff and Tough as Nails so you have thirst and temperature. That means you need real infrastructure just to stay alive. You cannot just chill and ignore the environment.
There are some strict rules that make it feel serious. No afk farms and no ender chests so every item takes real effort. Staff will not fix your problems. If someone robs you or kills you it is on you to deal with it. Players make their own courts and systems to solve fights.
The world is split into different groups right now. There is a capitalist district making civil codes and private property rules. There are socialist or communist style districts trying to share warehouses and make taxes for roads and stuff.
