I found The Frail Snail SMP and it feels like pure chaos in the best way.
It is basically an anarchy SMP with almost no rules so people can do whatever.
It also has guns and it has Create so you can mess around with crazy fights and builds at the same time.

Atlas is a 1:500 scale Earth Towny server that is all about geopolitics and big nation drama. It feels like a new style of Earth server where people try to carve out real places and turn them into something huge.
Players make nations by claiming a real life city or town then expanding outward as they recruit more people. The more players you bring in the more land you can claim so it turns into a race to grab your dream spot before someone else does.
War is a big part of it too. You can declare wars for land riches or just for the name and the story. The server also has custom stuff like Towny Geopolitica where you can create vassals claim titles and push to become a great power.
There is a battle points system meant to mix PvP players with regular players in a resource centered way. The server says it is in beta and the hosting is made to run smooth.

Legendary Hardcore is a permanent deathban Hardcore SMP where the world does not reset and there are no revives. It has been running for a year and a ton of players have joined and a lot of them have already died trying to make it.
It stays completely vanilla but it uses plugins that make hardcore more interesting. I saw stuff like player heads and the ability to access dead players enderchests. It also has Simple Voicechat and advanced player statistic tracking plus more.
The whole vibe is player led and unscripted so bases and alliances rise up then fall when people die. There is also a player maintained wiki that tracks the servers history and even documents every player who joins lives and dies.
They also launched an interactive map of the spawn region that shows changes made to spawn over time. It supports 1.21.11 on Java Edition and Bedrock Edition.

I found a fan made life series called Crescent Life. It is a group project with 40 plus people.
They already ran season 2 so it seems active and ongoing. It sounds like everyone joins in together for the seasons and plays it like a life series.

Back To Blocks is a fresh Vanilla plus SMP that keeps Minecraft simple and fair. It feels like normal survival but with a bunch of small changes that make it run smoother and play nicer. There is no pay to win and ranks are just cosmetic or quality of life.
The server has an End Event planned for next week so it is a good time to join and get geared with everyone. During the dragon fight it tracks damage in chat so you can see who did what.
Mobs scale with how many players are online so the world does not feel empty. It also uses per player mob caps so other players do not mess up your farms. Phantoms are optional and you can toggle them.
There are helpful commands like sethome and spawn. Warps can be unlocked by voting. Chat reporting from Mojang is disabled and you get death coordinates in chat plus item and ender links.
Builders get extra stuff too like armor stand editing invisible item frames custom player heads map signing to stop copying and item displays on signs.
