I found a server called MinecraftOffline and it is all about lifesteal and anarchy survival.
It runs on version 1.21.11 so it feels up to date. The play style is pretty wild since you can fight a lot and the lifesteal part makes every fight feel risky.
It also has a zero reset policy so worlds are meant to stay. It is hosted in Finland which should be nice for players in Europe.
They also say it uses custom plugins and the server is running on strong hardware so it should handle busy moments better.

ArcticMC is a new survival server that started just a couple days ago. It feels chill but it still has town and faction stuff so people can claim land and make groups.
You can build your own town and team up with other towns or you can try to take territory and start fights. PVP matters here and they run an honor system so fights are supposed to stay fair and not super toxic.
It also has McMMO skills so you level up while you play and get special abilities when your skills get high. There are custom items too and they even have furniture that is entity based so they plan limits to help with lag.
