I found Lounge SMP and it feels like a long term survival world that is meant to stick around. They say there are no resets so your builds and progress are supposed to last.
The server has active management and they keep doing improvements over time. The community sounds chill but still active and players help decide what happens next.
It is semi vanilla with a simple economy and unscripted lore that happens naturally while people play. There is voice chat and you can toggle pvp if you want fights or you want peace.
It is listed as 1.21.11 and there is also a Bedrock port option.
Drakona is a survival server where people build towns and start nations. It feels more community first and it is made for players who like trading and slowly growing a place with friends.
The world has custom terrain with big landscapes and deep cave systems so exploring and picking a town spot is fun. You can keep things peaceful or add risk since PvP is off in towns by default but you can turn it on if you want.
The economy is a big part of it. You can make money with jobs then trade in the Auction House or sell items with a sell menu. Player run shops are planned and the server says it is not pay to win.
There is also a skills system where you level up by playing normally and specialize over time. The server is still in beta but it is playable and they are improving it using feedback.
This is a community centered SMP that feels a lot like Hermit style survival. It is made by the players for the players and people are usually online throughout the day.

There is no world protection here. Everything is player enforced so if your town survives it is because you defended it. If it falls that is on you.
It is hard capped at 35 players so it stays personal and your name actually matters. Whitelist is required. Versions supported are 1.16 to 1.21.11.
I found LegionCraft and it is a OneBlock survival server where everything is about building up from a single block and pushing your island forward.
There are challenging bosses and when you beat them they can drop keys for rare loot. You can use keys on crates to get gear and rewards.
It also has chunk hoppers so you can automate parts of your island. The server says it is not pay to win so it feels more fair while you build grind fight and loot.
