I found this server called the World of Salvaris and it feels like a big storybook world.
The map is split into seven different continents because of a server side mod that changes how the terrain generates. Each season everyone focuses their builds on just one continent but you can still go explore all the others if you want.
The goal of the server is to make the world feel alive. Every player can add their own stories and builds so the world slowly fills up with different ideas. It is more about world building and storytelling and less about rushing.
They just started season 2 less than two weeks ago so everything is still pretty new. Season 2 also has some extra server side mods that give better quality of life and there is a Christmas themed event starting soon.
The community is meant to be tight knit. It seems like a place where you can join the new season meet people and make friends or even rivals while you build in this big shared world.

This server is kind of normal survival but with no clouds in the sky. It runs with a few plugins like Geyser ArmorPoser Coreprotect Luckperms and Vanish so it feels close to vanilla but still has some tools.
The funny part is the clouds have been broken since a Mojang update. The owner tried to fix it once and the terrain got reset in a weird way. It only wiped builds that overlapped with original terrain but other builds stayed. So the world looks lived in but also a little cursed.
There used to be a plugin that raised the build limit super high like around 2000 and when that got deleted it fixed the cloud issue for a bit. But now clouds are gone again and it has been like this since June. Besides that the server does not really have other problems so you just play normal survival under an empty sky.

Geopol Reforged 1.20.1 is a modded Java server that brings back the old Geopol style of play with a new twist. It is built around historical themed time periods so it feels like you are playing through different eras but in Minecraft.
The server is all about player driven nations and politics. Players control the economy and create their own countries. There are warfare systems so battles actually matter and there are server wide events that bring everyone into the action. You can roleplay if you want or just play normally.
The world is not an Earth map. It uses terrain generation mods so the map feels fresh and custom. There is PvP and warfare is allowed but random griefing that is not allowed by the rules is not ok. Netherite gear and better is part of the game. There are guns but they are toned back so it is not totally crazy.
There is some server lore and the community is meant to be 16 and older. The server and the discord are still in the startup phase so things are being tested and adjusted. The owners are also looking for admins playtesters and mods to help shape the server.

Posalon is a Minecraft worldbuilding project where the whole point is to build lore and history together.
Players can get into the politics of their nation. You can even try to start your own nation. There is a movecraft plugin so you can design planes tanks and ships and actually use them in real battles.
There is also a brewery style plugin so you can just be a bartender if you want. You can create and spread your own religion and try to get other people to follow it.
The big idea is that the community writes the story. Your actions on the server get remembered and become part of the wiki so your character and your choices become part of the world forever.
Posalon is not meant to be just an average server. It is more like a huge saga that everyone builds together and every player can write their own chapter in it.

I found this server called The New Dawn SMP and it feels like a small survival world where people actually care about what they build. It is a vanilla plus server so it is almost like normal Minecraft and they keep plugins low so it still feels like real survival.
