I found a small semi vanilla survival server that is being tested right now
They plan to officially start in about a week so it feels like a good time to get in early and be part of the beginning

I found a server called MinecraftOffline that runs on version 1.21.11.
It has a permanent map so your builds are meant to stay. It also uses a custom plugin suite so it is not just plain default.

I found Summitcores Craft and it is a simple whitelisted vanilla server on the latest Bedrock version.
