I found a server that is already running and it is trying to avoid that same old problem where people get stacked too fast and everyone quits. This one is a 1.21.11 Fabric semi anarchy server with light quality of life mods. It says it is not pay to win and nothing is game breaking.
The big moment is the Nether opening at 3:00 PM UTC. That is when the rush starts for quartz and nether gold and ancient debris. The world is still fresh so it feels like you are not late and there are no unstoppable empires yet.

All Outta Blocks is a community centered SMP that feels like Hermitcraft. It is made by the players for the players and the server changes can come from requests and polls.
It sticks close to vanilla but still adds some fun stuff. There is a diamond based economy with a shopping district plus public builds and big projects. Proximity chat is a big deal here and a lot of players actually use it.
You can use homes and there are some cosmetic and quality of life plugins too. The server is Java only on Minecraft 1.21.11 and it is whitelisted and 18+ only.

The Pen is a classic prison server with that old grind feel where you start with basic tools and leather armor and you have to work for better gear. It is meant to feel nostalgic and barebones with real progress instead of everyone being stacked right away.
Mining is a big deal here because you have to smelt your ores and then walk through PvP zones to sell at the Commissary. Swords and potions are illegal too so if a Guard sees you holding them they will fight you. If you act up you can even get sent to solitary confinement.
There are ranks that go from A down to H then Parolee then Citizen and after you hit the top you can prestige for special rewards. You can rent a prison cell or a plot to store stuff build and even run your own shop. There are also quests custom fishing parkour challenges an auction house and bounties if you want someone hunted.
One of the coolest parts is the illegal custom plants. You can grow them in your cell for profit but you better not get caught by the Guards. You can also become a Parolee and leave the prison to build a farm and make more money.GG.MINEWIND.NET New Server IPPeaceful Craft No Mods Needed
I found a server called Peaceful Craft and it is made to be chill and easy to join. You do not need any mods to get in so it feels simple.
The server has keep inventory on so dying is not a big deal. PvP is turned off so players are not fighting all the time.

Oblivion SMP is coming back with a modded season 2 and it is made for people who want a fresh start and a fun community.
It uses a custom mod pack with quality of life stuff plus new blocks weapons enchants bosses biomes and even a new dimension. It tries to keep things balanced so builders can chill and pvp players can still get their fights.
PvP is only allowed in designated areas so random fights do not ruin the vibe. The server is whitelist only so you have to apply and read the rules to get in.
