I found this modded server called Iperios and it is all about starting or joining nations. You can make your own government and your own laws and ranks. Or you can just join a nation that is already made if you do not feel like leading.
The server runs the Allthemods10 modpack on version 5.4 so you have to use that version. You also have to get whitelisted before you join. They explain how to join and give starter info in their new players info place.
When you first log in a staff member helps you out. They guide you and give you a beginner kit so you are not lost. After that you can go join a nation or build your own and start playing how you like.
The whole thing feels like a modded world where players control the politics and the rules. It looks good if you like nations and roleplay mixed with normal survival and a staff team that helps new people.

HoneyBlossom SMP is a new vanilla plus server that is made for players who are 18 and older. It is cross play for both Java and Bedrock and the world is not getting reset all the time so you can build long term.
The server has some simple plugins that keep the game feeling like normal Minecraft but a little better. There are land claims and you can tp to other players and set one home. There is a resource world and a nether resource world so the main world can stay nice. You can turn nightvision on and off and there is a toggle for pvp so you can choose if you want to fight or not. The server also uses Simple Voice Chat.
The owner and the players seem super nice and funny. They really care that people do not get ignored in chat and want everyone to feel welcome. The community is friendly and is also LGBT plus friendly and just everyone friendly in general.
The server is still new and they are adding more stuff as they go. They already plan to add an economy events and some cool ideas for pvp and more in the future. If you like chill survival and do not mind some changes while things improve this SMP feels like a good place to join and hang out.

This server is called Electron SMP and it is made for people who like Infuse style survival. It feels mostly like normal Minecraft but with more chaos because you can fight other players and you can grief.
There is a starter tutorial spawn that helps new players learn what to do at the beginning. After that you can go out into the world and do your own thing. The server wants people who actually play and talk and do stuff with others instead of logging in once and never coming back.
The community is small right now and they really want new members to join. They especially like when people bring friends so that groups can form and rivalries can start. The whole idea is that the game is more fun when teams and enemies show up and players interact a lot.

This is a hardcore Minecraft server where you only get one life and that is it. If you die you are gone forever. The whole world is built around that idea so every move actually matters.
The server feels mostly like normal vanilla but there are a few changes that make hardcore better. The map never resets so anything you build or break will stay for everyone to see. I think that makes the world feel really serious.
There are some custom features like statistic leaderboards so you can see who is doing the best. When a player dies their head can drop so you can collect them. There is also a way to turn off phantoms if you hate them.

I found this server called MinecraftOffline and it is based in Finland so it is really good for people in Europe. The main world is permanent so your builds will not get wiped all the time and that makes it feel like a long term place to play.
