This is a really cool Hermitcraft style SMP that is made by the players for the players. It is focused on keeping that classic vanilla feel but still lets the community vote on new plugins and features. When I joined there were usually a bunch of people online at different times so it did not feel empty at all.
The server has a diamond based economy and a real shopping district where people make stores. There are also public builds and big projects that anyone can help with. Most people use proximity chat so talking and joking while you build or mine feels super natural.
They use Minecraft 1.21.11 and it is Java only. The server is whitelisted and it is 18 plus only so the community is more mature but still chill. There are some extra plugins that add homes and other cosmetic or quality of life stuff that the community asks for in polls.
The whole goal of the server is to stay close to vanilla while still growing in the direction the players want. If you like community projects and a Hermitcraft type survival world this server really fits that style.

This is a PVE server and they do not allow griefing or stealing so it is meant to be chill and safe for builds.

I found a small Towny and SMP server called GamerHub Towny that is meant to be super chill. The big focus is no grief and no stealing so people can just build and relax.
Players mostly work on towns and try to grow them over time. There is also money ranks and towns to compete for so you always have something to aim at.
It has jobs and MCMMO and an in game ranking system. You can play on a vanilla map and there is also an Earth map option.
