This server is called Halcyon and it is a medieval style Lands PvP world. It feels like old school survival where you actually have to struggle a bit. Night cannot just be skipped and your health only comes back slowly and in special ways so every fight really matters.
The world is custom and handmade and it looks huge with big different biomes. There is no teleporting so travel is a big deal. People build roads waystations and even hidden railways underground. Crops and trees only grow well in certain biomes so players have to trade with each other to get what they want.
The server tries to reward creativity teamwork and specialization instead of boring meta tricks and big farms. Winning is more about brave battles smart trade deals strong cities and rallying other players to your banner.
There is no strict server lore you have to follow. The owner just lets players make their own stories. You can pick a direction punch trees and slowly your small base can turn into a big city or fortress as other players show up. People already make their own art books myths and weird superstitions and it all comes from how they play together.
The server runs the latest vanilla version 1.21.11 and it is hosted in Australia but there are players from Europe the Americas and Asia online a lot. It usually has a nice amount of people on so the world feels alive without being too crowded.

BumCraft Multiversal is a newer modded survival server that is trying to grow into a solid community. It is a sequel thing but you do not need to know the old server to join. The owner is running most of it and wants more consistent players.
The server uses All The Mods 10 version 5.4 and it also runs Infinity Legacy II version 2.7. It started homebrewed then switched packs and they might add their own stuff later.
It is mostly PvE and it has very light RP with a bunch of roles. There are leaders like barons and town leaders and faction leaders plus warriors and other ranks so people have status.
Rules are kept in the Discord but the vibe is simple. Do not be a jerk and keep the chat clean even if it is not super strict.

I found a Java server on 1.21.11 that just started a brand new season so everything feels fresh and busy. People are already making bases exploring nearby land and grinding resources.

Atropolis is a newly opened survival multiplayer world that is aiming for a 16+ community. It is semi vanilla so it still feels like normal Minecraft but with some quality of life stuff added.
Phantoms are turned off and there is a one person sleep option. There is also a PvP toggle so you can choose if you want that. Some mobs have anti grief changes too.
They have anti grief protections and rollbacks in case something bad happens. Keep inventory is on in the nether and the end.
There are some add ons like Simple Voicechat and a live map plus elytra trims and a deathcount. Player and mob head drops are included. Voice chat and elytra trims are optional if you want to use them.
