This server is called CaveMC and it is on Season 2 right now. The whole overworld is a giant cave world so there is no normal surface at all. Everything is underground with different biomes resources and structures so it feels super weird but also really cool.
It is semi anarchy survival so the world is pretty brutal. People can fight and grief and only the most clever players really last. The gameplay is still kind of vanilla but it has custom world generation that real Minecraft devs made so it looks and plays different from normal.
Season 2 adds a huge new thing called the Wasteland Dimension. It is not just a biome. It is like a whole extra place to explore. There is brand new gear you can only get there so combat and survival change a lot. There are big mega structures with secrets and loot so exploring actually matters.
The Wasteland also has its own currency and a new economy so players can trade and do more player driven stuff. There is a new spawn for this season that fits the Wasteland vibe. The map is custom generated and has special features and tricks so it is not just a normal world.
If you like hard survival underground bases and crazy exploration this server is all about that. It is for players who like danger and want to live in caves instead of on the surface.

Emberline SMP is a new small survival server that wants about 20 players total. It feels like the owner just wants a good group of people who actually play and talk together.
The server is basically vanilla but it has proximity voice chat. There is a tutorial on how to install it in the discord so even if you never used it before you can figure it out.
There is also one player sleep so you do not need everyone in a bed at night. Player heads can drop too so you can collect them.
You have to join the discord and send an application. When they hit 20 people in the discord they are going to start the world and that will be the full group.

Suralt is a survival server that feels really fair because there is no pay to win stuff and no store. It is just normal Minecraft where everyone has the same chance.
The server has an economy and chest shops so players can make their own shops and trade with each other. There are player warps too so you can set your own places and visit cool builds that other people make.
You can rank up over time and unlock perks as you play. There are skills you can level by surviving building and exploring so it feels a bit like an RPG while still being survival.
There is an in game shop for grabbing useful items and some unique things. You can also do quests which give you goals and rewards while you progress on the server.
Suralt has minions that help you out and make survival easier and more fun. There are also pets that can follow you around and level up their own skills while you go on adventures.
Overall it feels like a chill survival world with extra systems that keep you busy and a friendly community that wants a fair play style.

EchelonMC is a custom survival SMP that feels different from most servers I see. The owners use their own code and not a copy paste plugin pack so everything fits together really well.
The server is survival but it has extra systems that are made to help long term play. As you walk around you can make paths and get speed when you use them. There is a currency you earn just by playing and you spend it on progression and useful stuff.
Land claiming is a big focus. Claims have visual borders and per chunk settings and a bunch of anti grief tools. You can control mobs TNT fire spread raids and even fluids so builds stay safe.
There are public chunks where you can publish your builds for other players to visit. You can earn from visitors and try to climb the rankings. You can also make teams invite your friends and use team utilities while showing off team nametags.
When you die a grave appears with your items for a limited time. You also get access to back so you can return after teleports and not lose everything.
The server has voting with rewards a spawn hub with custom NPCs and utilities and Discord chat linking plus anti x ray protections. The staff update it often and they listen to player feedback.
It runs on version 1.21.11 as recommended and older versions are also supported. The server is non pay to win and built to evolve with the community.

Cobble Commons is a community survival server that is all about players and not about money. There are no paid ranks or pay to win crates. Everything you unlock is earned just by playing for a long time.
The server uses a bunch of quality of life plugins. There is a big RPG style skill system so you can level things like mining farming and fighting and get passive boosts. There is also a rank system with different rank paths and some ranks even have build requirements so you always have goals and reasons to work on your base.
Towns are a huge part of the server. Players use a land system to make organized settlements and districts and then grow them to help with rank progress. There is also custom furniture and decor so builds can look a lot more detailed than normal vanilla. If you like building cool houses and towns this place really helps you do that.
The economy is 100 percent player driven. You set up your own shopkeeper stalls and trade with other players instead of buying everything from an admin shop. This makes it feel like a real market with players deciding prices.
The owner self hosts the hardware so the server is meant to stay online long term. Java and Bedrock players can join together so friends on different platforms can still play on the same world.
