VoidMC is a recently launched Vanilla plus survival server on Java 1.21.11. It stays playable on a normal vanilla client since it only uses datapacks.
The world is permanent with no resets so your builds and progress stick around. You can roam through custom world generation and new biomes then stumble into discoverable structures and dungeon style content.

EchelonMC is a fully custom survival server for Minecraft Java that is built for long term building and teamwork. It is not trying to be a sweaty pvp place and it is meant to avoid stealing and griefing.
The server is on 1.21.11 and older versions are supported. It has custom coded systems and it is actively developed with frequent patches. It also says there is no pay to win and the balance gets shaped by player feedback.
You can walk around and create paths under you and get speed bonuses on them and you can toggle it. There is an Echelites currency you earn by playing and you can spend it on progression utilities and quality of life stuff.

It has a custom Altar plugin that adds strong altars around the map. Factions can fight over them to get buffs and advantages. It makes normal survival feel more strategic with alliances rivalries territory control and lore that happens on its own.
This is not an anarchy grief place. Griefing and random stealing are not allowed. PvP is allowed but cheating and exploit abuse are not.
