I found a survival server called NoF3 and it is built around playing without the F3 menu. That means no coords and no normal debug info. The idea is you have to learn the world by traveling and making landmarks. Roads and transport builds matter a lot more. Maps and lodestones actually feel useful.
The server is whitelisted and it is strictly 18 plus so everyone is around the same maturity level. It also tries to make the Nether feel like something you conquer not something you skip. Nether roof use is not the vibe here and they want tunnels and real infrastructure. Natural regeneration is turned off so fights and early game are scary.
