The Garden SMP is a Java 1.21.11 survival multiplayer server that is built for worldbuilding adventure and roleplay. It uses plugins to add extra flavor while still feeling like survival.
You start with 3 lives and you only lose them through PvP. If you run out you become a ghost and the story keeps going. Players can also bring someone back using a craftable revival book.
Some vanilla stuff is turned off to help roleplay like no Elytra and no Ender chests. This makes travel and building roads and towns matter more and it pushes players to interact.
There are lots of extras like locking chests with keys and making lockpicks to break in. You can set up chest shops brew alcohols and beers and even tame any mob as a pet.
When you join you wake up above the clouds then you stick the landing and go down the Monolith to begin. You can pick a race for your character like elf halfling merfolk giant or human then you wake on the docks of Isla De Viva Eterna. From there you can sail to the mainlands and claim land or live in a town with others.
The vibe is relaxed with optional challenges and it is not pay to win. Staff and mods are active and the community is small but thriving.

Toms3 is a cracked anarchy server that came back with a brand new world after being gone for years. It is inspired by 2b2t and Hisparquia and it is meant to be a small fresh option.
It is full anarchy with no admins and no rules. There are no bans no filters and no shadowbans so people can play however they want.
It tries to stay near vanilla with only small changes to keep it stable. There is no /tpa and no /home and the chat is like 2b2t with greentext plus /w /r and /ignore.
There is a separate authentication server and premium players skip the auth part. The anti cheat is relaxed so stuff like ElytraFly AntiKnockback Velocity and NoFall should work but flight is blocked.
The server has two dupes listed which are an item frame dupe that is nerfed and a donkey dupe on 1.15.2. Printers work with Litematica and Air Place works too. Crystal pvp is changed since anchors and offhand crystals are heavily penalized.

I found a very early alpha server with a late medieval vibe where factions fight and the economy matters a lot.
You can go all in on warfare and PvP or you can grind progression like an MMO. You can also play more chill as a trader gatherer craftsman or contractor and still matter because factions need supplies and builds.
There are custom crops and custom furniture plus custom weapons that have unique effects. Mobs are stronger than vanilla and there are boss mobs that push you to party up.
Trading is meant to be safe since there is a secure trade window system and the main market hub is Osthaven where you spawn and trade. You can also set up temporary wilderness camps that are protected so you can hunt gather and travel.
