Mature Whitelisted Vanilla SMP That Lasts
I found a community based survival server that is whitelisted and aimed at mature players. It is built for people who like to work together and make a world they can stick with for a long time.
The gameplay is vanilla first with a few quality of life changes. Phantoms are turned off and endermen cannot mess up your builds and shulkers drop double shells.
The world border starts small and grows every day and it is currently 5000 by 5000. They also use Simple Voice Chat so you can talk while you play.

CaliCraft is a player run democracy server based out of California where you can actually shape what happens. Every two weeks players elect an Emperor and that person can make real choices for the server.
The Emperor can add or remove plugins across gamemodes. They can make laws and even imprison people for any reason including staff. If you get marked as a fugitive you can end up spawning in prison when you die or getting dragged there in handcuffs if you are caught. The Emperor has to follow the Constitution but they can make temporary laws during their reign and some laws can become permanent through a 3 day Discord poll.
There is a lobby that sends you into different gamemodes fast. Modded Survival has custom enchantments plus skills and jobs plus an economy and auction house and custom dungeons and vote crates with strong gear. Vanilla Survival has QOL stuff like quests chest sorting and daily rewards. Skyblock is classic with extra addons.
They also run Cobblemon on a separate Fabric server so you need the Cobblemon modpack to play it. The server has custom content too like a custom resource pack with unique mobs animals elites and dungeon bosses with special drops.

This is a community centered survival server that is made by the players for the players. It aims for a Hermitcraft style SMP where building and hanging out matters a lot.
There is a diamond based economy with a shopping district. People also work on public builds and bigger projects together. Proximity chat is a big thing here and most players use it.
The server tries to keep the vanilla experience but it can grow over time if the community votes for changes. There are homes plus some cosmetic and quality of life and fun plugins that come from community requests and polls.

HoneyBlossom SMP is a vanilla plus survival server that is trying to feel like real Minecraft but smoother and more social. It is 18 plus and it supports cross play for Java and Bedrock. The server is meant to be a forever world with no resets so your builds can stay for the long run.
I found out they just moved to new high performance hardware so the server can run better. The server is hosted on the US east coast but there are players from all over. The vibe is friendly and people are encouraged to make friends and have fun even if you only play a little.
There are quality of life plugins like claims player teleport multiple homes nightvision and a pvp toggle. They also use Simple Voice Chat for talking while you play.
They run events a lot and there is an End event planned this weekend for newer players. There is also a custom resource world plus a nether resource world so gathering stuff does not have to trash the main areas. I found UnstoppableSMP and it is based on UnstableSMP. It is a survival server that is open for everyone.
You can join on Java or Bedrock and it also allows cracked players. The version listed is 1.21.11.
