FolksMC is a tight knit survival server that has been running since August last year and it has a real community vibe. They even keep a history of what has happened so far so it feels like the world has stories.
It plays like a semi vanilla SMP but with factions. You can join a team make your own or just live solo as a nomad. There are wars too but the groups have to agree on the war rules before it starts so it stays fun.
There are a few helpful plugins like two set homes plus spawn. You also get gravestones so your stuff is safer after you die. There is woodcutting sit and SimpleVC for voice chat.

ArcticMC is a new survival server that just started a couple days ago. It mixes Towny and factions so you can build a town then claim land and make allies or fight for territory.
PVP matters here but it is supposed to be honorable. They have an honor system that gets explained in their rules so fights do not feel like pure chaos.
You can level skills with McMMO while you play. It feels more like an MMO since you train stuff like mining and combat and unlock special abilities.
The world uses Tectonic generation so the land looks realistic with big mountains and valleys. There are also custom items and even furniture but it is entity based so they plan limits to help with lag.

Malgazar SMP is a chill survival server for people who want to build without everything getting ruined. The community stays pretty active and you can usually find around 10 players online with about 350 total players so far.
The rules are strict about being fair. No griefing no stealing no scamming no slurs no xray no cheats no duping and no seed maps. PvP is only if both players agree and you also are not allowed to mess with other peoples pets or animals.
It uses some QOL stuff like veinminer and keep inventory is on. Explosions do not destroy blocks. Fishing has extra rare loot like elytra trident and heart of the ocean.
