Foggy Willows is a server that really tries to be pure vanilla. It runs on the normal minecraft server jar with no plugins and no datapacks at all. It feels like playing singleplayer but with other people around.
There is no fancy spawn and no giant wall of signs you have to read. You just join and start surviving. Players are expected to deal with their own problems and figure things out. You can play how you want and build what you want. Technical players are welcome here too.
The server is always updated to the latest stable vanilla version. It is self hosted on a machine made just for this. There are no donations and no world border. There is no teleport and no sethome so traveling actually matters. The game is set to hard mode so mobs and survival are more dangerous.
Most people will probably like semi vanilla servers more but if you want real vanilla with all the weird quirks and challenges this place feels pretty unique. There is also a discord and the server is Java only.

I found a Forge 1.20.1 SMP called Creativity SMP. It is a survival server where you can build megafarms as big as you want as long as they do not lag the server. They say the server is really strong so it can handle a lot.
People can recommend mods and also give server suggestions. The server has Create and Valkyrien Skies planes plus the Clockwork addon for Valkyrien Skies. It is also an early new server so it feels fresh.
