Banana Sandwich SMP is a Java 1.21.11 survival server that is in Season 3 right now. The season is about 1.5 months in so it is past the early game rush and it feels more stable.
People have built up infrastructure and there are active shops in a shopping district. There is also a safe hub on a Mushroom Island so you have a good place to start.
Proximity voice chat is required and it really changes how players interact. The vibe is 18 plus and more mature and chill and collaborative.

You can claim land so your builds stay protected. The economy is player driven so money mostly moves between players and trading is a big deal. Elysium is a small Java server that just reopened with a fresh start in early November. It is a multi world place and they are looking for 18+ players to join. There are a few long time members from the older server too.
The Survival world runs on 1.21.10 and has a 10k by 10k border. It has mcMMO skills and an online map you can open with a command. Teleport commands are mostly off so it feels more vanilla and people use Nether roof travel instead. There is also a shopping district at spawn where players can make chest shops and use diamonds as money.
If you like building there is a Plots world with 85 by 85 plots so you can build in peace. You start with one plot and can earn more by moving up build ranks. There is also a Creative superflat freebuild world for bigger community builds and higher ranks. You are allowed to build together but you cannot mess with other peoples builds without permission.
