I found FellowshipSMP and it is a new community SMP that just opened last weekend. It is whitelist only and it is 18+ only so it feels more chill and mature.
It is semi vanilla with no ranks and no donor perks. There is no server shop and the economy is diamond based. There are also no teleport shortcuts so travel and bases matter more.
The server uses ValhallaMMO and ValhallaTrinkets for deeper progression. The world uses Terralith generation. Players can run shops with Shopkeepers and rent market space with AdvancedRegionMarket.
There is Bluemap so you can view the world and Bell Claims for land claiming. Phantoms are disabled. The Ender Dragon respawns weekly and it has a reworked multi phase raid boss style fight.

This server is a classic prison grind with that older school feel where you start with basic tools and leather gear and you work your way up.
You mine ores then you actually have to smelt them and move through pvp zones to sell at the commissary so it feels risky and slow in a good way.
There are Guards who help new players and also enforce contraband. Swords and potions are illegal so if a Guard sees you with them they will pvp you. You can even get sent to solitary for bad conduct.
Once you climb the ranks from A through H you can reach Parolee and then Citizen. Parolee lets you leave the prison and build a farm to earn more money. After top rank you can prestige for special rewards.
There are quests for extra cash or special items plus custom fishing. You can rent a cell or a plot to store stuff build and make your own shop. There are illegal special plants you can grow for profit if you do not get caught. Straight Up is a vanilla survival SMP that tries to feel like real Minecraft and not a bunch of extra server stuff. It is built around the idea of a forever world and the overworld has not been wiped since April 1st 2019.
There are no land claims and no protected areas so what you build is on you to defend. PvP and griefing are allowed so it can get intense and you need to be careful who you trust.
There is no tpa and no home commands. There is also no currency and no factions and no economy plugins so it stays close to the normal game.
They also support proximity chat with server side support for the Simple Voice Chat mod if you want to use it. I found a server called Infinite Islands and it is all about starting an island and building it up. The cool part is it never resets so your progress sticks and the world can keep expanding as you grow.
There are custom cave systems with multi level caves. The ores regenerate so mining stays useful and there are custom mobs plus bosses down there too.
Fishing is a big deal here with over 100 unique textured fish to catch and collect. There are also 60 fishing mobs to fight.
The server has hundreds of quests so you always have stuff to do and a clear path to progress. There are seasonal payouts so you can compete hard or just play chill and still fit in.
