Electron SMP is a new semi vanilla server that is made to feel really close to pure vanilla. It is inspired by DonutSMP but it does not have a bunch of crazy plugins.
Spawn is built in an Infuse style and right now there is only one lava cast. The whole idea is to get players who want to lava cast all around spawn and slowly turn it into something insane. The spawn area is supposed to become a total mess over time because of the players.
The server is for people who actually play the game. Players here grind for gear and power. They pvp and raid other players. They do long term progress and do not just log on walk around and log off. If you quit after ten minutes this server is not really for you.
Rules are super simple. No hacking. No slurs. Pretty much everything else is fair game. That means griefing around spawn is allowed. Lava casting is allowed. Raiding is allowed.
The server is still really new so the first players will decide how wild and chaotic spawn becomes. If you want DonutSMP style energy but with almost pure vanilla gameplay then Electron SMP fits that vibe.

True Vanilla Anarchy Done Right
I found RefinedVanilla and it is a true vanilla anarchy server with basically no rules except no hacked clients. You can build destroy explore and just do whatever you want in a world that stays close to how Mojang intended.
It runs on Fabric instead of Paper or Folia so stuff like redstone TNT pistons and tick timing act like single player. That makes it feel right for technical players who care about real vanilla behavior.
They also have a custom Fabric fork with multithreading to help it handle higher player counts. The server can change simulation distance mobcaps and render distance to keep it running smooth.

It runs 24 7 and you can join with Java versions from 1.7.2 up to 1.21.11. They recommend 1.21.10 so you do not run into weird issues.
The world border is massive at 2 million blocks and there are no map resets. There is no pay to win and there is no teleporting. Griefing and PvP are fully allowed.
The only non vanilla command is spawn so people far out can still get back to civilization. Nether roof access is allowed. Phantoms are removed and only half the players are needed to skip the night.
