This server is called Eden and it is a wild social experiment. The owner wanted to see what happens to Minecraft when you remove infinite resources.
On Eden mobs do not drop xp so you cannot just make a mob farm and be done. To enchant gear or repair tools you have to build factories. These are big multi block builds that eat crops and ores and then give you xp and refined stuff.
Resources are not the same everywhere. Some biomes have certain crops and ores and others do not. You cannot just dig a hole and make one base that does everything. You have to find neighbors and trade so your factories and supply chains keep running.
The server uses a reinforcement system for protection. You do not claim land with a simple command. You reinforce each block with stone or iron or diamond. If you cannot afford to reinforce it then you probably cannot keep it safe.
Because of this players stopped living in dirt huts. They build strong industrial city states instead. The starter stone age is over and now nations compete for the resources to fuel their big industrial setups.
The world does not reset so everything you build and every nation you make can last. There is still room for new nations merchants and factory players who want to jump into this age of industry.

Progress is tied to in game money and play time so you can rise through ranks and unlock more access and prestige. There are configurable tech components so players can make factories and try to become a big industry power.
There are lots of quality of life improvements and extra things to do like catching and selling legendary fish using crates and selling items in the server shop or your own shop. You can take jobs to get paid while playing and level them up and also level up McMMO. I found MCBloodlines and it is a brand new hardcore SMP that is invite only. It is built to make people play in groups and slowly build up real civilizations over time.
The cool part is only players who are already invited can invite new people. It makes the community grow in a more natural way and it helps keep random trolls out.
There are also secret tweaks and mechanics that you are not given guides for. Players have to figure stuff out on their own which makes paying attention actually matter.

I found Spiral SMP and it is a Lifesteal SMP style server. It is not public yet but it might open on the weekend.

World of Eldin is a well established server with a few mods that help with protecting land and running an economy.
When you first join you can find a town to join right away or you can head out and live on your own.
A lot of towns and bases have shops that use NPCs. They buy different items from you so you can earn currency. Then you can use that money to buy stuff from other players or protect your own land.
Ranks are tied to the Lands plugin. Your rank goes up as you claim more chunks. You can join someone town or grow your own. You can also make alliances and even build a nation made of towns.
The world has a big road system that players build together. It makes travel easier between settlements and horses are a popular way to get around. The current map started in November of 25 so there is still a lot left to explore.
