EchelonMC is a custom survival SMP that feels different from most servers I see. The owners use their own code and not a copy paste plugin pack so everything fits together really well.
The server is survival but it has extra systems that are made to help long term play. As you walk around you can make paths and get speed when you use them. There is a currency you earn just by playing and you spend it on progression and useful stuff.
Land claiming is a big focus. Claims have visual borders and per chunk settings and a bunch of anti grief tools. You can control mobs TNT fire spread raids and even fluids so builds stay safe.
There are public chunks where you can publish your builds for other players to visit. You can earn from visitors and try to climb the rankings. You can also make teams invite your friends and use team utilities while showing off team nametags.
When you die a grave appears with your items for a limited time. You also get access to back so you can return after teleports and not lose everything.
The server has voting with rewards a spawn hub with custom NPCs and utilities and Discord chat linking plus anti x ray protections. The staff update it often and they listen to player feedback.
It runs on version 1.21.11 as recommended and older versions are also supported. The server is non pay to win and built to evolve with the community.

I found Goober SMP and it is a new Vanilla+ survival server that just started so the world is still fresh. It already has a small active group and it feels like it wants a chill community with lots of player interaction.
The gameplay stays mostly vanilla but it adds a few extra things to make multiplayer more fun. PvP is allowed so you can fight if you want but it also pushes building and community projects like towns.

AquaBridge is a semi vanilla server for practicing bridging skills on Minecraft 1.8.8. It is made for players who want to get better at placing blocks fast and clean without it being the Hypixel Bridge game mode.
The server has a replay system so you can watch what you did and learn from it. There is a moderated verification system and you can set your spawn position.

The server is player driven and roleplay is welcome if players want it. People are making their own stories and factions are showing up fast so you can join one or start your own.
It is PvPvE. You can only steal other players weapons and ammo if you kill them. Bigger teams get more territory to claim. Be careful who you pick a fight with because friends might come back for revenge.

This is an EU anarchy server called MinecraftOffline. It feels like pure survival chaos but with a few custom plugins that make fights and travel more intense.
You can set a home and teleport back to it. You can also send teleport requests to other players which makes meeting up easier but still risky.
The big twist is lifesteal. If you kill players you gain hearts and if you die you lose hearts. If you run out of hearts you get banned. New players get a one hour grace period so they can learn the server first.
PvP is taken seriously because commands get blocked in combat and combat logging is punished. If you log out in a fight you get replaced by an NPC that can be killed and it drops your items.
There are also some protections like stopping extreme speed cheats and reducing severe chat spam. You can vote skip night with a command. There is a shop that uses vote tokens for custom name colors and custom MOTDs. Pure Anarchy is a no rules survival server where people can grief raid steal and kill. It feels like the kind of world where you have to watch your back all the time.
The map does not reset so whatever gets built or destroyed will stick around. You can use /tpa and /home to move around faster and try to stay alive.
