This server is called Dominion Society and it feels a lot like Hermitcraft but smaller and just starting out. It is a survival world that wants to last a long time and the players care about creativity and building cool things together.
The server is mostly vanilla. There are some datapacks that help with stuff like AFK display durability pings coordinates HUD and multiplayer sleep. There is also BlueMap so you can look at the world from above and proximity voice chat so talking feels more real. TNT duping is allowed and there is a player run shopping district where everyone can set up shops.
They do big kickoff events where new players join at the same time as the older members. Everyone meets explores and builds together and they even run minigames during the event so nobody has to start alone.
Rules are simple. No griefing stealing or harassment. No hacks dupes or exploits. Chat should stay mature and friendly. PVP has to be agreed on by both players. No lag machines or crazy spam farms that wreck the server. You have to be at least 16 and they want real answers on the application not one word stuff.
The whole place feels like a tight but chill community that wants people who actually stick around and help shape the world instead of just leaving after a day.

I found a lifesteal SMP where fights actually matter since hearts are on the line. If you lose all your hearts you end up as a ghost in their custom graveyard system so getting wiped feels scary.
The main server wide thing is a Dragon Egg capture game. You kill the Ender Dragon to get the egg then whoever holds it can place it in the overworld and start earning Shards and money every 10 minutes. The longer it stays with you and your team the bigger the payout so people really try to lock it down.
It never stays safe for long because everyone can see the egg location on their live BlueMap and players can buy a tracking compass that points right to it. Anyone can break it and steal it plus you can set bounties on the current holder. It turns into nonstop raids and alliances and messy wars over one block.

I found a One Piece themed Minecraft RPG server that is doing a closed alpha test and it is built from the ground up with modded mechanics.

There are Marine and Pirate NPCs around the world and there is also safer fishing at spawn docks where you can sell fish for side cash. I found SimPvP and it is a really old Minecraft Java server that has been running since September 2011. The world stays the same and it will never reset so you can walk through years of player history.
This is a semi anarchy style place where griefing raiding and killing are allowed. Hacking is not allowed so it is still meant to be fair.
It also keeps things simple with no home commands and no tpa and no warp. There are no kits and no crates either so you have to survive and travel the normal way.
