I found a chill vanilla survival server that is whitelisted and made for a small community. It feels relaxed and casual and it is meant to be a place to build explore and hang out.
They keep rules pretty light and they do not want people griefing builds. PvP is allowed though so you can fight if you want to.

PeaMC is a semi vanilla SMP that tries to feel like classic Minecraft survival. There are no teleports and there are no land claims so you travel the world the normal way and build where you want.
It is whitelisted so people have to apply which helps keep trolls out. The owner and mods are active in game and in Discord and the community is meant to be chill.
The server supports crossplay for Java and Bedrock from 1.7x to 1.21.11. You can form teams and invite friends. PvP is allowed but griefing and stealing from bases is not allowed and spawn killing is not allowed.
There is newbie protection where PvP is off for your first hour unless you disable it. Some destructive PvP stuff is banned like TNT beds respawn anchors end crystals and minecart PvP and maces are banned too.
