I found an Earth SMP server that runs on both Java and Bedrock so more people can play together.
The world is a scaled down version of real Earth and it already has a bunch of towns and cities made by players. There is a modern New York City with tall skyscrapers and there are also classical style towns in Europe plus more projects all over the map.

PVP matters here but they try to keep it fair with an honor system that is explained in their rules. It also uses McMMO style skills so you level up as you play and unlock special abilities.
The world generation is Tectonic so the terrain looks realistic with big mountains and valleys. There are also custom items like furniture and it is entity based so they plan limits to help with lag.

PurpleSMP is a small survival server that feels simple but still refined. It is mostly PVE and it is meant to be a relaxing place to build on the latest Minecraft versions. PvP is off by default but you can turn it on if you just want to mess around with friends.
It has mcMMO so grinding skills and resources actually feels satisfying. The economy is fully player made since there are no server shops and no server currency.
Your builds are protected with land claims and the server also logs every block placed or destroyed. It even backs up your inventory when you join leave and when you die so staff can help restore items if you lose stuff because someone broke the rules.
There is a strong anti cheat and staff get alerts right away when it triggers. There is no world border so you can go far out and find untouched land and make something huge.
