I found this server called Chilltown and it is a calm survival SMP with a really cozy vibe. It feels very close to vanilla but without a lot of chaos or pay to win stuff.
The server has been running since 2019 and the current world has grown over time with player towns farms and projects. It looks like the kind of place where people actually stay and build long term instead of resetting all the time.
There is a custom handcrafted world instead of just random terrain. The world also has seasons that change how everything looks which makes it feel more alive.
Chilltown has custom mobs weapons tools and enchants but they are balanced and not super overpowered. You can claim land using a simple chunk system so your builds stay safe.
The community is mostly adults and it seems very respectful and laid back. It is good for players who like to play survival at their own pace. You can play solo and still have fun.

Foggy Willows is a server for people who want real vanilla Minecraft with no tricks. It runs on the normal minecraft server jar and there are no datapacks and no plugins at all.
The server is hard mode and there is no teleport and no sethome and no world border. There is no fancy spawn or long books to read. You just join and start playing like a normal singleplayer world but with other people.
Players are expected to handle their own social problems. You can play how you want and build what you want. Technical Minecraft players are welcome too.
The server always stays on the latest stable vanilla jar and it is self hosted on a purpose built machine. There are no donations.
It is Java only and it is made for people who really want the full vanilla experience with all the quirks and challenges.

Kraftalis Plus is a Minecraft nations server on a full world map. When you join there are no borders and no countries yet. Players have to explore and claim land and turn it into real nations.
The main idea is politics expansion diplomacy and war. Countries can try to stay peaceful and make alliances or they can go into serious conflict. Wars are not just random griefing. They follow clear rules that are made by experienced admins so fights feel fair and planned and not just chaos.
Over time resources start to matter and nations compete for them. This makes tension between players feel real and every decision can change the balance of power on the map.

This is a lifesteal anarchy server that has been running for about a year and it feels really chaotic in a fun way. You spawn in and players can steal your hearts when they kill you and you lose hearts when you die.
If you lose all your hearts you get banned so every fight feels intense and scary. New players get a one hour grace period where they do not lose hearts so you can learn the server before things get crazy.
There are simple commands like sethome and home so you can save a base and teleport back. You can also use tpa and tpaccept to teleport to other players which makes teaming or trapping much easier.
The server has a combat system that blocks using commands in fights and if you log out in combat it spawns an npc with your stuff so people can still kill you and get the loot. It also has checks to stop extreme speed cheats and some chat spam.
There is an in game shop where you spend vote tokens on custom name colors and custom motds. The stats system tracks how long you play plus your kills and deaths and it gives rewards at milestones. Players can also vote to skip the night with a simple command.
Overall it feels like a harsh lifesteal world with simple quality of life commands and custom plugins that make pvp and survival way more intense.

Legends of Stonehaven is a new medieval fantasy RPG server that feels like a big adventure world. It is built around a huge modpack with revamped combat and it feels really smooth with cool animations and even a dodge move.
You get an in depth skill tree and special origins so your character can feel different from other people. There are custom weapons armor trinkets bosses and divine style blessings that are balanced for this pack. Enemies get stronger the farther you go so exploring actually feels risky and fun.
The world generation is changed a lot in the overworld nether and end so everything looks more fantasy themed. There are hundreds of dungeons and structures plus five extra dimensions you can find. There are also two main magic mods that let you do a lot both in and out of combat.
The server has over two hundred quests you can do alone or with friends and some of them add lore and story about the world. There is a quest shop where you can spend coins you earn on useful items. There are also quality of life things like backpacks and better storage so playing feels nicer.
Performance is a big focus so they use mods to improve fps and loading. It is a whitelisted server so you have to join the community first before you can play.
