    I found Dopecraft 420 and it is a newer modded survival server that is trying to get more players. People have already started some progress but it sounds like you can still jump in and do your own thing.

    The rules are supposed to be few and easy. The modpack is kind of heavy and it leans on mods like Warium Valkyrien Skies Create Mekanism and Biomes O Plenty plus a lot more from the modlist.

    Creative building is optional. The version listed is Forge 1.20.1 and they mention a setup where Fabric API shows up because of a sync mod and another mod that lets it work on Forge.

    EchelonMC is a fully custom survival server on Java and it is made for long term building and teamwork. It is not about PvP or stealing or griefing so it feels way more chill and serious for people who want a lasting world.

    The server is still new with about a month of active development and it gets frequent patches. It is built from the ground up with custom coded systems and it has no pay to win stuff. The features and balance are shaped by player feedback so it keeps changing in a good way.

    There is auto pathing that makes paths under you while you walk and you can get speed bonuses on them and you can toggle it. You also earn Echelites currency just by playing and you can spend it on progression utilities and quality of life.

    Land claiming is advanced with visual borders and per chunk settings plus anti grief protection and controls for mobs TNT fire spread raids and fluids. You can publish public chunks so other players can visit builds and you can earn rewards from visitors and climb build rankings.

    There is a teams system so you can invite friends share utilities and show custom team nametags. Deaths make timed graves that hold your items and there is also /back to help you recover after teleports. It also has voting rewards discord linking with a chat bridge a spawn hub with NPCs and anti x ray protections.

    I found a normal SMP that is launching on Feb 20. It is meant to feel simple and close to vanilla.

    There is no economy system and it is not modded. It uses only a few plugins but they are not supposed to change gameplay much.

    The server supports crossplay and it is up 24 7. They also say there will be no resets so your stuff can stick around long term.

    NoF3 NoRegen Hardcore Survival 18+

    I found a survival server called NoF3 and it is built around playing without the F3 menu. That means no coords and no normal debug info. The idea is you have to learn the world by traveling and making landmarks. Roads and transport builds matter a lot more. Maps and lodestones actually feel useful.

    The server is whitelisted and it is strictly 18 plus so everyone is around the same maturity level. It also tries to make the Nether feel like something you conquer not something you skip. Nether roof use is not the vibe here and they want tunnels and real infrastructure. They also use a mod so portals remember where you came from and you do not have to do coordinate math even though the 8 to 1 ratio is still respected. Minecart experimental speed is enabled up to 120 blocks per second.

    Natural regeneration is turned off so fights and early game are scary. Healing is more about planning like suspicious stew with regeneration and they added slow healing with honey bottles as a balance option. There are more changes too like villager trade rebalancing. Looting can go on axes. Mending is disabled and unbreaking does not work on elytra.
