CaveMC is a survival server where the whole overworld is underground and there is no surface at all. Everything is caves with different biomes resources and structures so it feels like a giant cave only world. It is semi anarchy so it is pretty brutal and mostly the strongest and smartest players will survive.
The server uses enhanced vanilla with custom world generation made by real Minecraft developers. Because of that the caves feel unique and you can explore for a long time and still find new stuff.
Season 2 adds a fresh start for everyone so new players can join in without being too far behind. There is also a new Wasteland Dimension that opens on November 8. It is not just a biome but a whole extra place with its own custom generated map.
In the Wasteland you can find brand new powerful gear that changes how combat and survival works. There are huge mega structures that hide secrets and valuable resources so exploring is a big part of the game. The Wasteland also has its own currency that creates a special economy and new ways to trade with other players.

5tarRock is a semi vanilla geopolitical survival server that works on both Java and Bedrock. The world is really tough and you actually have to think if you want to live. Resources are not evenly spread out and the environments can be super hostile so where you settle and who you team with actually matters a lot.
The server has realistic style systems that make exploring and specializing feel important. Ores generate based on tectonic plates so you cannot just dig anywhere and expect the same stuff. Biome temperature affects how your crops grow so farming is different in each region. The world has huge landmasses that are disconnected so no single region has every resource you need.
Because of that you either explore trade or just take what you want. You can play solo or in a group and both styles can work if you adapt. There is also a reworked combat system and some world lore so the server feels more like its own world.

Hasturian Realms is a modded SMP that runs Prominence II Hasturian Era on Fabric 1.20.1. It is built for players who want an RPG style world with real progression.

I found this server called AVP SMP and it is a modded survival world that is made for long term play. The whole thing is set up with a sci fi style and AVP type theme so it feels different from normal Minecraft.
The server uses Create and Immersive Engineering so players can build big factories and power systems. People are supposed to work on huge bases and shared infrastructure projects together. There is also space exploration and alien style threats so there is more danger and progression than regular survival.
PvP is turned on but it is not forced so you do not have to fight if you do not want to. The world is meant to last a long time and there are no planned resets so big builds actually matter.
