This server is called Creative Central and it feels like someone has been planning it forever. The whole network is built around almost ten years of lore and worldbuilding that all fits together in the same canon.
There are two main game modes right now. On CC Plots you get a massive 512 by 512 creative plot. You get free WorldEdit and there are not many limits on blocks or commands. You can also use headdatabase and armorstandtools without paying so you can customize tiny details on builds and armor stands.
On CC Earth you play on a Towny server with a 1 to 500 scale Earth map. You can start a town claim land and use the economy to keep your town running. You can form nations with other players and grow your territory together. PvP is on in some parts of the world but it is not the main focus and it does not block your progress.
The server is strictly not pay to win and there are no microtransactions that give you advantages. There is a sponsor rank that costs money but it only gives cosmetic perks for players who want to support the server.
Creative Central is part of something called Project Everything which is a group of different worldbuilding stories and lore from a bunch of people all in the same universe. The whole place feels like it is made for players who like building exploring and being part of a big shared story.

Veilfall is a Minecraft server project I found that is going for a dark fantasy MMO style feel. It is all about exploring a big world while getting stronger over time.
The main stuff seems to be custom dungeons with tough bosses plus unique loot and progression. There are safe zones where you can breathe a bit and dangerous regions where things get scary.

I found a pretty new public server called RebirthMC and it feels like a mostly vanilla survival place.
The community is small and really welcoming. In just over a week I ran into some of the best builders and redstoners and farm builders I have seen.

I found ArcticMC SMP and it is a chill survival server that mixes Towny and factions. It only launched a couple days ago so it feels fresh and easy to get started.
You can build a town and claim your space then make alliances or go for territory like a real faction server. PVP matters here but they use an honor system that is explained in their rules.
It also has McMMO skills so you level up while you play and unlock special abilities as you grow. There are custom items too and they even have furniture that is entity based with plans to limit it per chunk to help with lag.

Puffer SMP is a long term survival server that is all about community. It is meant for people who actually want to stick around and play with others.
The world is built to last so your progress is not getting wiped all the time. The gameplay feels inspired by Hermitcraft with an economy and player shops plus a shopping district and big builds.
People team up trade and work on group projects. There are events too and it sounds like they try to keep it natural instead of forcing you to be active.
This server uses a strict whitelist application. The point is to keep out griefers and trolls and to make sure members are mature respectful and serious about joining. They are looking for 18 plus players including builders redstoners explorers and casual grinders.
