Canopy is a semi vanilla survival server that feels a lot like Hermitcraft. The players like to work together on big builds towns and events. Most people are in their early to mid twenties so the vibe is more grown up but still really chill.
The server runs hard mode survival and it is on version 1.21.10. It uses Paper and only a few plugins that do not change the vanilla feel. There is no teleport and no land claim so it still feels like real Minecraft. They also use some datapacks like armor stand tweaks mob head drops and invisible item frames.
There is a soft world border at 8k blocks. You can go past it but the outside area might be reset later for new content. Inside the main area there are community builds like a shopping mall a campground and shared farms. There is also a dynamic online map so you can see builds almost in real time.

So I found this server called GeoSMP and it is a new Vanilla Earth style world. The map is based on Earth and you can make your own towns and build up with other people.
The server is pretty fresh so you can get a nice start and not feel super behind everyone else. It feels really balanced and not pay to win and that makes it more fun to just play and explore.
The owner and staff worked really hard on it and you can kind of tell when you run around and see how everything is set up. They are trying to grow the community and want players of all ages to join and hang out.
