I found this server called Cozy MC and it feels really calm. They can have around 100 players online and it still does not feel crazy or loud. People actually help each other and it feels like a real shared world.
The world is just normal Minecraft survival. It is vanilla so there are no weird plugins changing the game and there are no plots or minigames. Everyone just builds near each other and shares roads and railways and other stuff.
The server is trust based so there are no land claims. You are supposed to read the rules carefully first. If something bad happens staff has tools to roll stuff back so that helps keep it safe.

This server is called Apotheosis Anarchy and it is all about wild survival without hacking. The idea is you get that anarchy feeling but everyone has to play fair.
It is mostly vanilla but the terrain is changed and there are a lot of new vanilla style structures to find. So the world feels fresh and kind of epic but still like normal Minecraft.
You can make factions with other players and stick together. People build bases and try to get stronger over time. Other players can grief those bases and try to knock you down so there is always some danger.

MobFighters is a Minecraft Java 1.21.1 server that feels like Super Smash Bros but inside Minecraft. It is also kind of like Super Smash Mobs from the old Mineplex server.
Instead of normal PvP you play as different mob fighters. Every fighter is unique and has its own abilities and stats and each one has a strong ultimate move. The combat uses percentage based knockback so the higher your percent the farther you go flying.
