I found this survival server that tries to stay as vanilla as possible and it is all about freedom.
There are no gameplay rules and no admins watching over you. There are no land claims and no protection so griefing and PvP can happen anytime. Cheating and building and basically everything goes.
It also says there are no server sided dupes and there are no world resets so the world keeps its history.

Pretzel SMP is a whitelisted Java server for people who are 17 and up. It started on February 18th 2026 and it is made for players who just want to build and play in a calm chill way.
The server is vanilla on 1.21.11 but it uses some server side mods and datapacks to make things smoother. Stuff like Simple Voice Chat and Audioplayer are on here plus things like Armor Poser Vein Miner Lumberjack head drops and double shulker shell drops.

FabricCraft is a survival server that sticks to real vanilla mechanics because it runs on Fabric. It is semi anarchy so you get a lot of freedom with only a few rules.
There are no land claims and there are no world resets so the world stays the same and players shape it over time. That means you will see trade alliances rivalries and raids and all the weird politics that come with it.
Hacked clients or mods that give you an advantage are not allowed. Griefing is banned within 1k of spawn and it is handled with active moderation instead of claim plugins.
There is also a creative world with no plots and no big space limits so people can test builds before doing them in survival. If you like speedrunning there is a manhunt mode you can play too. The server is roleplay focused with lore and factions. People try to be friends and build together but there are also wars and fights when groups clash. PvP is more of a side thing but it can still happen.
There is a safe zone at spawn where players can build shops and hang out. They also use the Simple VC mod so people can talk in voice.
