So I found this server called CollideCraft Time Zero and it feels like you crash into some broken dimension. The world is not calm at all and everything feels kind of wrong. Space is tight and resources are not easy to get so you actually have to fight and think to survive.
It is a semi vanilla SMP with some light lore so there is a story vibe but it is still Minecraft survival. There is lifesteal so killing people actually matters and makes things way more intense. There are factions so people group up and make alliances and you never really know who you can trust.
The server also uses prox chat so you can hear people when they get close and that makes sneaking and teaming way more fun. There are frequent events too so it is not just grinding all the time. Players also get to choose plugins so the community helps shape how the server feels.
It just launched and it works for both Java and Bedrock together so more people can join in. Survival here feels earned not given and it really fits if you like a tough world with drama and hidden stuff under the surface.

I found a Java SMP server that is based on Towny and it has an economy. The whole world is a custom United States map at 1 to 125 scale so traveling and picking a spot feels cool.
It is small but super active and it can hit around 40 players when it is busy with a 60 player cap. A lot of the mountains are still empty so there is tons of room to start a town and build it up.
There are different nations you can join and there are lots of places to choose from like Cascadia the desert Appalachia and the Great Lakes. The mods are really responsive to suggestions and feedback.

PeaSMP is a semi vanilla survival server that tries to keep Minecraft feeling normal. There is no teleport stuff and there are no land claims. You can just explore and build without the world feeling modded up.
It still has a few small extras for fun like wearing blocks as hats and sitting on slabs or stairs. You can also make teams with friends. The server is whitelisted so you have to apply in Discord first and that helps keep trolls out.
PvP is on but it is not the main focus and it does not happen much. New players get one hour of PvP protection. Elytras are disabled in combat and if you PvP log you die. You can loot enemy bodies.
The rules are simple. No hacks or exploits and no harassment. Griefing and stealing are not allowed even though PvP is allowed. Destructive PvP is banned so stuff like TNT minecarts beds end crystals and respawn anchors cannot be used that way.
