CobbleSMP is a brand new SMP that uses the Cobblemon mod. It makes survival feel like Minecraft with Pokemon running around so you can play and explore.
It is Java only and you need the Cobblemon mod to join. The server is hosted on Aternos so it is not online 24 7.
There is no claiming so you have to respect other players builds. Do not grief because if you grief you get banned.

The world has a 3 million border and the nether and end are 375k for now and it can grow later. There are no map resets and nether roof access is on.
It is hard difficulty. Only 25 percent of players need to sleep to skip the night. You also respawn farther out around spawn.
Phantoms are optional and you can toggle them with a command. They recommend playing on the latest version to avoid problems.

I found a survival server called CaveMC that is semi anarchy and feels like enhanced vanilla. The whole overworld is underground so there is no surface at all. It uses custom world generation made by real Minecraft developers and the caves stretch forever with biomes resources and structures.
The vibe is brutal survival and you really have to be resourceful to make it. Season 2 is a fresh start with a bunch of additions.
There is also a Wasteland Dimension that opens on November 8th. It brings brand new gear to fight over plus huge mega structures with mysteries and valuable stuff. It also has its own unique currency so players can make a new economy and trade. The world still has lots of unexplored land so you can grab a spot and settle in for the long run. You can protect your builds with land claims and the server logs blocks so staff can check what happened.
It uses mcMMO for skill grinding and it has a player economy with no shops and no server currency so players decide what stuff is worth. There are player vaults for extra storage and a server map you can view online.
PvP is off by default but you can toggle it if you want to fight with friends. The server also runs anti cheat and staff get alerted when it triggers. AvalonEarth is an Earth SMP style geopol server where players make towns and nations and then deal with politics. The map is 1:500 so there is a lot of space to spread out and claim land.
It runs Towny so you can build up your town and grow into a nation. The server gives starter money so anyone can start a nation right away without extra requirements.
You can join on Java or Bedrock. There are lots of conflicts and wars if you want that. If you do not like wars you can try to live peaceful and avoid most of it.
