This is a small and pretty chill Minecraft server that already has over 100 players. It is still fairly new and people are active and hanging out.
The server has grief protection so you can build without stressing about your stuff getting ruined. There are a few mods but they do not really change how your game runs. It still feels normal to play.

This server is a vanilla anarchy survival world that starts you in the middle of the ocean. When you join you have to swim or use a boat and find land before you can really build or explore. It feels like an adventure right from the first minute.
The world has been around since 2011 so the terrain is super mixed. You can find really old areas and ruins and if you travel far enough you can reach newer land that was generated after 2014. Sometimes player and mob heads drop in combat so fights can give you cool trophies.
The server uses a few simple datapacks that give you commands like trigger home and trigger spawn. You can set up to 10 homes which makes moving around the giant old world a lot easier. Nothing else really changes the gameplay so it still feels like classic vanilla Minecraft.
There are only two rules. You have to treat other players with respect and you cannot try to crash the server on purpose. Besides that almost anything is allowed. Griefing is allowed and hacked clients are allowed too so you need to be careful and smart about your builds.
Most people playing are in their mid twenties or older. A lot are from the US and there are also some Russian and Polish speakers. The vibe is pretty relaxed and not super structured so you can just do your own thing and explore or fight or build how you want.

KKDOGS is a new Minecraft minigames server that is trying to be fun and fair and focused on the community. It is still growing so you can join early and actually be part of the server while it gets bigger.
The server has some minigames you do not see everywhere. One of them is called Creative plus and it sounds pretty different so it is worth checking out if you are bored of the usual stuff.

Shadow MC is a semi vanilla SMP that is made for both Java and Bedrock players. It lets everyone play together so it feels like one big world.

This is a survival multiplayer server that feels like a different take on normal Minecraft. It still keeps the vanilla style but it adds a lot of extra stuff that makes the game feel bigger and more focused on playing with other people.
