I found GamerHub Towny and it feels like a chill survival place where people build towns and just hang out. The server is new and it started as a streaming server but now it is trying to grow into a bigger community.

There is also a bakery system where you farm and bake cookies with custom mechanics plus long term cookie quests and leaderboards.
Players can rent cells and plots and run player shops. There is an auction house and bounties and parkour challenges. Guards enforce contraband rules and there are illegal crops that are high risk and high reward.
