I found this server called CaveMC and it is kind of insane. The whole overworld is just one giant underground cave world. There is no normal surface at all. Everywhere you go is caves biomes resources and hidden places.
It plays like enhanced vanilla with semi anarchy rules so it feels really dangerous. Survival is super brutal and only the players that are smart and careful last very long. People explore fight and try to control the best spots.
This is Season 2 so it is a fresh start and they added a lot of new stuff. The biggest thing is a new Wasteland dimension. It is not just a biome. It is a whole new place with its own special gear and huge mega structures that you can explore.
In the Wasteland there is a unique currency and its own economy so players can trade and build power in different ways. There is also a new spawn that matches the theme and a custom generated map that looks really cool and has special features.
If you like tough survival semi anarchy and living only underground this server feels perfect. It is all about exploring dark caves fighting for loot and trying to survive longer than everyone else.

FabricCraft is a survival server that sticks to real vanilla mechanics because it runs on Fabric. It is semi anarchy so you get a lot of freedom with only a few rules.
There are no land claims and there are no world resets so the world stays the same and players shape it over time. That means you will see trade alliances rivalries and raids and all the weird politics that come with it.
Hacked clients or mods that give you an advantage are not allowed. Griefing is banned within 1k of spawn and it is handled with active moderation instead of claim plugins.

ArcticMC is a new survival server that started only a couple days ago and it feels pretty calm and friendly.
It is an SMP with Towny and factions so you can build a town then team up with others or try to take and defend territory.
PvP matters here but they use an honor system that is explained in their rules so fights are meant to stay fair.
You also get McMMO skills so you level up stuff like mining and combat while you play and you can unlock special abilities.
The world uses Tectonic generation so the terrain looks realistic with big mountains and valleys and lots of nice places to build.

Iperios is an SMP where players make nations and build up power through wars and politics. You can start your own nation and choose your government then set laws and ranks. If you do not want to run one you can join a nation that already exists.
The server has a geopolitics system with resource camps you can conquer. These camps become your first income of geopolitical resources so your nation can expand and take more territory.
