I found a smaller SMP called Klawcraft and it is not super popular.
It is a survival server with magic stuff and it seems pretty cool.
It is starting tomorrow so it sounds like a fresh start if you want to jump in early.

Crown SMP is a fresh survival SMP that opens on March 20th and everyone starts at the same time. It already has a big Discord group and people ready to play on day one.
The server stays close to vanilla survival but it has a custom Crown plugin. If you wear the Crown you get 3 extra hearts and there are only 5 maces total on the whole server so finding rare stuff matters.
It supports both Java and Bedrock so more friends can join together. There is anti cheat and anti xray to keep things fair and the world border is 10000 by 10000 so you have room to explore.

The full release is on March 14 and it runs on Java 1.21.11.

GOOMB SMP is a vanilla survival server in Season 2 and it is set in an amplified world. The world reset about three months ago and a lot of players have already jumped in and started building bases.
At first the world border pushed everyone closer together. Now the border has expanded so there is more room for big plans and new bases. The End has been opened too and players kicked off an egg hunt event so people can interact and meet each other.
The community is super active with shop ads trading talk and lots of screenshots of the crazy terrain. Voice chats are often full of people just hanging out and talking about what they want to build next.
The rules are simple. Be respectful no hate speech or NSFW and keep things mature and drama free. No griefing stealing or unconsented PvP. Joining happens through an application and then you get whitelisted.

The server has a Survival Guide that helps you find everything. There are vanilla friendly cosmetics and custom tags plus a leaderboard that tracks weekly monthly and all time stats. They also run unique weekly events and community events.

I found a new Java SMP that is vanilla and meant to be small and chill.
The main rule is no griefing so it feels more relaxed and friendly for people who just want to play.
They have around 20 members right now and usually about 5 people online. Sometimes it goes over 10 online at once. They are looking for more players to join.

BackToBlocks feels like plain survival with just a few helpful extras. It stays close to vanilla and it works for both Java and Bedrock players.
The spawn is built by the community and the server runs events. There is a Nether Hub and the End Island is decorated too.
Players use a Shopping District for trading and the vibe is more about building and hanging out. You get light commands like sethome and tpa and there is also itemflip if you want to gamble items for fun.
There is no pay to win and they try to avoid silly plugins. It is not really focused on PvP but PvP and raiding can happen with limits. Griefing is not allowed and you can toggle phantoms if you want.
