I found this server called UneasyVanilla and it is a vanilla anarchy world with no hacking allowed. It has been running since March 10th 2020 so the world feels old and lived in.
The idea is to play Minecraft the way the developers made it. There are no gameplay changing plugins. There is no teleport and no sethome. There is no grief protection. There is no forced economy so players make their own trades and groups.

Invictus SMP is a survival server that has been running since 2020 and it is already on season 11 so it feels pretty established but still fresh.
The server is semi vanilla with hard mode and mobs that level up so it is more challenging than normal but still feels like Minecraft and not some crazy mod pack.
