I found MyChunk and it is a global creative server made for people who really like building. It tries to stay stable and lag free so you can focus on your projects.
The main thing is the MyWorld system where you get your own private space. You can control permissions and choose who can build with you.
WorldEdit is free to use and it is not stuck behind a paywall. There is also advanced grief protection so your builds stay under your control.

I found HighTide SMP and it is a brand new 18 plus survival crew that is trying to stay tight knit and actually social.
It is whitelist only so they want trusted players and they care about people not ruining the world. There are game nights movie nights event nights and even drinking nights so it feels more like a group than just randoms.
It supports both Java and Bedrock so you can join from different devices. They use stuff like graves so you do not lose your items and tree chop to make wood faster. There is a live map and CoreProtect to help stop stealing and griefing.
They also have chest refill after 5 minutes so other players can grab loot too. PvP is a toggle so you can turn duels on or off.

Mythvale is a survival server where players build towns and nations and basically control what the world becomes. It is all about worldbuilding and politics so your choices can change the history of the server.
People can found towns and claim land then grow into bigger settlements. There is warfare too with nation fights and territory being taken. You can also trade with other players in a player run economy.
The server uses a custom world made for exploring and settling. It supports Java and Bedrock crossplay and it is launching soon on version 1.21.11. HermitLike Season Two is a newer SMP that feels a lot like HermitCraft with people who like to build cool stuff and just hang out. It started up about a month ago and the community is already active and ready for more players to join the new season.
The server is on 1.21.11 and it supports crossplay so Java and Bedrock players can be in the same world even on consoles and Switch. It stays mainly vanilla with only a few quality of life and moderation plugins so it does not feel complicated and there are no teleports or warps.
It is also a no pay to win kind of place with no voting and no crates. After the starting period there will be a communal shopping district. There is a live map so you can see builds and where people are.
