Two Teams Battle for Regions SMP
RegionsSMP is a seasonal survival server where everyone gets split into two teams. The teams are called the Melon Marauders and the Pumpkin Patriots. The main goal is to fight for ownership of regions across the world.
Over about a month players can claim regions on the map and battle over them. When a team claims a region it gets protected from the other team unless the enemy owns an adjacent region. That makes the map feel like a big warzone where land keeps changing hands.
The server is a passion project and the owner wants to learn from each season to improve the next one. Expect changes and new stuff over time like adjustments and custom items. Atoq SMP is a chill vanilla plus server that started as a friend group and grew into an established community. People hang out a lot and there are active voice chats so it feels social even when you are just mining.
The server runs long seasons and does events and polls so players get a say in what happens. Getting in uses a form application so it stays more controlled and friendly.
It is Java 1.21.1 and it uses mods like in game voice chat and a paint mod. It also has custom origins so you can pick different powers and play styles.

I found MinedHype SMP and it is a friendly long term public survival server that has been around for years with the same owner. It is on Minecraft 1.21.11 and it aims for a mostly vanilla kind of survival.
There is no whitelist and it says no pay to win. There is also no money economy plugin so shops are run by players with item trades instead.
Grief protection is done with claims and grief is allowed if a spot is not claimed. They also use CoreProtect to help with problems.
The Overworld and Nether are meant to never reset. There is no set world border or even a set spawn and players spawn randomly within the first 40k blocks. You can use /rtp to get a random spot and then set a /home.

VanillaEvolved is a vanilla Minecraft SMP that has been around since 2013. It is meant to feel like normal Minecraft with not many unnecessary things added.
The server is semi anarchy so you get a lot of freedom. You can do whatever you want as long as no rules are broken and the community is friendly mostly.

I found a true vanilla hardcore SMP where it stays simple with minimal plugins and no ranks or pay to win stuff
The world border is big so you can actually go explore and build far out without feeling cramped
When you join for the first time you spawn with some starter items plus invis and regen so you can sneak away from spawn and get set up
Death matters here because you get tempbanned when you die so every trip and fight feels intense
