Campfire SMP is a chill 18 plus Minecraft server that wants to stay around for years and not reset all the time. It is semi vanilla and whitelisted so you actually get to know the people you play with.
The server started in September 2025 and already has a shopping district with a diamond based economy. There are nether highways a battle arena and a mini games area so there is a lot to do if you like community projects.
Most players are adults in their 20s and older and they hang out in voice chat a lot. People work on builds play other games together or just talk so it feels like a small friend group not a random public server.
The server runs on Purpur 1.21.11 with only a few plugins and data packs for quality of life and admin stuff. It still feels like normal survival because there is no tpa and no home command. You have to travel and explore for real.
There are data packs like anti enderman griefing custom armor stands mini blocks player heads and a coordinates hud. The world border is 40k by 40k so there is lots of space and it will grow with big updates.

GamerHub Towny is a small Towny and SMP server with a chill community and a no grief vibe. It is also no reset so your builds and towns are meant to stick around.
People mostly play in the mornings to early afternoon AEST when the US players are on then it gets active again late at night AEST when EU wakes up. There are already some Aussie players on in the evenings too so you are not alone.
The server has Towny so you can build claim and grow a town. It also has jobs MCMMO and ranks plus dynmap. There are player warps player shops and a sell only server shop.

I found a newer server that is built around a custom tech and magic modpack and it is meant to last a long time. The main vibe is role play and RPG style survival with a big community focus.
Players get a lot of choice in how they play because of the origins setup. You pick things like a race and class and magic alignment and a background plus a second class. There are tons of options so it is easy to make a unique build and grow stronger over time with the skill system.
The tech side is based around create so people can build factories and trains and make big projects. There are also options for players who do not want to be magic users so you can still fit into the world.
Exploring sounds like a huge part of it with lots of dungeons and structures and scary creatures across the realm.
