I found a Java server that feels mostly like normal Minecraft. It stays on the latest version and it only uses a couple quality of life plugins like Proximity Chat and VeinMiner.
The people playing are active and they seem friendly. The server is heavily moderated so griefing is almost not a thing.

People record videos here and they want players who can help make lore and story moments. You have to apply with a written application and they want you to explain how you would add lore.

The community is whitelisted and feels welcoming and inclusive so it is easy to meet people and make friends. The owners stay engaged with managing updates and they also play on the server.

Golden Nations is a geopolitical Minecraft server where players make nations and try to survive politics and war. You can lead with diplomacy or just go full conflict and see who lasts.
It runs on version 1.21.11 and the world is 5000 by 5000 so people are forced to interact early. With no elytras travel and borders matter a lot.
The economy is player driven so the market is controlled by players. You can still sell food crops and ores but the rest is shaped by trading and what nations decide to do.
Wars are high stakes because if you die in an official war you get banned for 24 hours and your character is fully reset. Fishing is also changed with custom loot tables so it can give rare stuff that matters.

GoPlay is a Minecraft 1.21 server that is trying hard to keep survival fair clean and long term. The big thing is it is not pay to win and perks are earned instead of bought.
The main mode is SMP with a brand new spawn. It has random teleport in the Overworld Nether and End. You can claim land and set up player shops. You can also use flight time inside your own claims and you earn that by voting.
There are custom 1.21.4 packs for bases and cosmetics plus player vaults for extra storage. The End dragon can be respawned so people can keep going back to the End.
There is also a Vanilla mode that stays very close to pure Minecraft with no added mechanics and it still has random teleport. The server is paid for out of pocket so you can just play and not feel pushed to buy stuff.GG.MINEWIND.NET New Server IP
