I found a small closed beta vanilla Java server that wants a few committed players or small groups. It is survival focused and the progress is meant to take a long time.
The main point is testing long term stability while you actually play and progress. They want people to notice weird behavior soft locks or crashes and also see how things interact with custom code. Some mechanics are kept secret so you can discover them.
It is whitelist only with a small tester pool and it may be a bit harder than normal survival. The server is hosted in US West but they said anyone can join if they are fine with occasional instability.

I found a gang themed Minecraft server that feels like the old 2010s faction days.
You can start your own gang then fight other gangs and take their land. The main goal is to control turf and mess with who owns what.

I found Goober SMP and it is a new Vanilla+ survival server that just started so the world is still fresh. It already has a small active group and it feels like it wants a chill community with lots of player interaction.
The gameplay stays mostly vanilla but it adds a few extra things to make multiplayer more fun. PvP is allowed so you can fight if you want but it also pushes building and community projects like towns.
