Rattata SMP is a mature community survival server that tries to stay as close to vanilla as possible. It runs on Paper and it is open to both Java and Bedrock players.
The rules are simple so it feels chill. Do not grief and use common sense. There is no tp and there are no modified loot tables or custom world generation so it stays basic vanilla.

I found this Heart Steal SMP where the whole point is to steal and keep the Dragon Egg. If you hold the egg you get special buffs but you are not safe because people can track you.
It works on Bedrock and Java and it stays updated to the latest version. It has custom armor sets plus shields and weapons and it also has useful commands like /tpa /rtp and /bal.

United Lands is a Towny based Earth SMP on 1.21.5 and it is all about making nations and fighting over land. It uses a 1:500 scale Earth map so groups can claim huge areas without crazy upkeep and try to shape borders however they want. Big groups can also get discounts.
The gameplay goes deep with towns all over the world plus roleplay and PvP when things get heated. There are custom items and gear and even weird foods like avocados and mac and cheese.
Progress feels like you get choices since there are 7 jobs and each one has its own skill tree. You can work toward Masterwork Armor and upgrades like extra sethomes and even flying in your town.
The economy is player driven with no admin shops. Players set up warps for shops so you have to hunt for good deals or try to become the best seller.

RegionsSMP is a seasonal SMP where everyone picks one of two teams and then the whole month turns into a big fight for the map.
The main idea is regions. Your team can claim regions and try to take control over time. A claimed region is protected from the other team unless they own a region right next to it. That makes the border areas feel like an active warzone with lots of pushing and taking land back.
The server is run like a passion project and it changes as new seasons happen. The owner wants to learn each season and upgrade the next one with adjustments and new things.
