I found this server called BluMoon SMP and it is just a simple vanilla place. It is running Minecraft 1.21.11 and there are no mods at all so it feels like normal Minecraft.
The server is whitelisted so you have to apply on their discord before you can join. That makes it feel more safe and more chill because random people do not just pop in.
The vibe is super relaxing. It is meant for players who just want to hang out and play survival in a calm way. There is a lot of open space on the server so you can pick a spot and build without feeling crowded.

Minecart SMP is a small modded Minecraft server that feels really cozy and simple.
The server has a skills system so you can slowly level up while you play and get stronger over time. There is vein miner so mining ores and clearing stone feels way faster and just more fun.

This is a pretty new Minecraft server that is trying to stay as close to real vanilla as possible. When you join you appear in a small safe zone. You get invis and regen and some starter items so you can escape spawn and head out into the wild.
The server is hardcore mode so if you die you get banned for a while. It is not just a quick respawn. You actually have to be careful and think before you fight or jump into caves. There is no tpa or home and there are no ranks or pay to win stuff. It is just plain survival with real risk.
The server works on the newest Copper Golem update. It supports both Java and Bedrock so you can play with friends on different devices. If you want a serious survival world where every heart matters this server feels like that kind of place.

SurviveWithUs is a semi vanilla survival server that feels like an old school community world and not a giant pay to win network. It keeps the normal Minecraft vibe but adds custom quality of life features that make things smoother without turning the game into something totally different.

SolarCiv is a Minecraft server that puts you on a giant Earth map and tells you to survive and conquer. The world is based on real geography so mountains oceans and land shapes actually matter when you build towns and plan wars.
The main gameplay is Towny with nations and land claims. You can make a town grow it into a nation and fight other nations with SiegeWar. There is a lot of PvP and big battles when people try to take each others land so it feels like a strategy game but inside Minecraft.
The server also has MCMMO so your skills level up while you play. There is a physical gold economy so your money is real items you can trade and protect. You can even brew your own drinks which makes towns feel more alive and fun.
