Blothera is a vanilla like survival overhaul server that feels tough and slow in a good way. It uses a bunch of custom in house plugins and it is built around strategy and a world shaped by players.
It is not pay to win and there are no kits. There is no teleport spam and you cannot use coordinates so you have to actually learn the land. You get around with maps and compasses and banners can act like spawn points so outposts matter.
It runs a Hardcore Lite system where each death removes a max heart. You can get max hearts back with golden apples or by sleeping near a campfire. Natural regen from full hunger is turned off so healing is about stews potions golden apples and sleep.
The survival rules are harder too like crops needing sunlight and animals needing open sky to breed. Overcrowding can cause disease and progression pushes you to explore more than one kind of structure.
Every few weeks there is a Bloodmoon night where the sky turns red and stronger monsters show up even in lit areas. They can hear you so sneaking matters.
There is also an alignment system where killing players drops your alignment and can make you a bandit. Bandits are kill on sight and cannot join nations. Nations unlock after the Ender Dragon is defeated and they are run with books and lecterns with records of actions. If things get serious players can siege towns with cannons and airships.

Toms3 is a cracked anarchy server that takes big inspiration from 2b2t and Hisparquia. It is meant to feel like full anarchy with barely any changes to normal gameplay.
There are no admins running around and there are no rules. No bans no chat filters and no shadowbans. You can do whatever you want and hacks are allowed. Movement stuff like flight mostly does not work because of the anti cheat but bypasses are allowed.
It stays near vanilla and it avoids easy stuff like /tpa and /home. The chat feels like old school anarchy with greentext plus /w /r and /ignore.
The server updates weekly so it is not left behind with broken plugins. They are also making their own plugin called Toms3Core just for this server.
It has a separate authentication server and premium players can mark their account as premium to skip auth and change names without losing stuff. There are two dupes listed right now like a nerfed item frame dupe and a donkey dupe for 1.15.2.

It uses a town claiming style so you can build and protect a town with other players. People can form nations and do politics like alliances rivalries and diplomacy.

I found a Fabric server on 1.19.2 that is trying to keep things simple and friendly. It is an SMP with a lightweight modpack and they keep the mod list small on purpose.

The server is online all the time and it supports Java versions from 1.7.2 up to 1.21.11. It is recommended to use 1.21.11 so stuff works right.
The world border is massive at 2 million blocks so there is a ton of space to live and hide. There are no map resets and there is no pay to win. PvP and griefing are allowed and the only command you get is /spawn so people far away can still get back to civilization.

There is also a big expansion called the Wasteland Dimension opening on November 8th. It brings new gear to fight over huge mega structures with secrets and a unique currency for a new player driven economy.
