Bee SMP is a small 18 plus Java server that runs on Fabric and it is starting back up with a fresh world on February 11th.
It is modded and the season changes a lot of vanilla stuff like structures fishing farming exploring and building. I saw big mods like Create Farmers Delight Friends and Foes Gone Fishing Patboxs brewery Sea Life Serene Seasons SVC and Travelers Backpack. There are also smaller mods that add extra sounds particle effects and other immersive tweaks.
The community likes doing events building projects and game nights. Being able to use voice chat is preferred.

TopBlocks is a competitive box server where you start with a tiny box and limited stuff. You mine what you can and try to turn it into progress.
The whole loop is mine sell and upgrade. You can expand your box as you earn more. It feels like a grind server where smart choices matter since there are no resets.
As you prestige you can unlock custom powers that help you keep pushing. There is also a leaderboard and box top rewards so people are always trying to outplay each other.

ArcticMC is a new survival server that mixes Towny and factions so you can build a town then team up or fight over land.
PVP matters here but it is supposed to be honorable. They use an honor system and it is explained in their rules.
You can level up skills with McMMO while you mine fight and explore. There are also custom items like furniture and it is entity based so they plan limits per chunk to help with lag.

I found a full anarchy server where everything is allowed and there are no rules at all. It is made for players who want total freedom and do not want the server telling them what to do.
It runs from 1.7 to 1.21.11 so a lot of different versions can get in. There are no anti cheat plugins so it is truly anything goes.
It also supports Bedrock players using Geyser so both Java and Bedrock can join. It is on a free host with a subdomain but it has performance plugins and it starts up automatically when you join.GG.MINEWIND.NET New Server IPParasite Apocalypse Quarantine Survival
This server is a modern apocalypse survival world with a horror vibe where parasites are growing into something that wants everyone dead.
Players start inside a quarantined zone called Alpigus. The wall stays powered for 7 days so everyone is stuck inside until it fails. When the grid goes down the wall opens and the Nether unlocks and the End becomes reachable too.
There is also a big escape timer. Later a nuke drops inside the wall and wipes everything in that zone. If you do not get out in time you are basically finished.
It is not hardcore. There is land claim to stop griefing and PVP. Claims do not stop stealing though so you still have to be smart. You can also toggle PVP inside claims with claim commands.
